All that Guinness leave you feeling a little bloated this St Patrick’s day? We have created a delicious and healthy smoothie that will have you looking so good you are bound to induce the green eyed monster in all your friends. A super healthy addition to your diet, and great as a refreshing treat after indulging St Patrick.
- 1 Cup Shredded Spinach
- 2 Kiwifruit
- 1 Apricot
- 1 Cup Fruit Juice
- 8 Ice Cubes
- Squeeze of Lemon
- 1 Sprig of Mint
- Wash and shred the spinach, peel and chop kiwi's and apricot
- Into the blender put the spinach, kiwifruit, apricot, fruit juice, ice cubes, lemon & a few mint leaves.
- Blend for 2 minutes or until the smoothie turns a dark green color.
- Pour into your favorite glass and garnish with a sprig of mint.
Dark green leafy vegetables such as spinach are full of iron and will give you a good boost, Kale and silverbeet could also be used as an alternative.
Adding cucumbers to this recipe in Summer will make it even more refreshing.
