Christmas pudding truffles

You would not guess that less than 5% of Taiwanese people are Christian, the streets are filling with Christmas trees covered in bells tinsel and enough flashing lights to redirect air traffic. Santa hats at dumpling shops is not the strange thing, what is strange is that it is actually putting me in the Christmas mood. Normally when walking into shops blaring carols my Christmas spirit hibernates until Christmas eve. Not this year our flat has had the Christmas tree up for a month and I have been humming along with frosty the snow man (even after the 4th version). Christmas Pudding Truffles

These Christmas puddling truffles are perfect as tasty treats on Christmas day or wrap them up as gifts for chocolate lovers. This recipe is a simple idea to decorate chocolate truffles so they look like tiny Christmas puddings I will explain the marzipan way and for those not so fond of marzipan a white chocolate method

Christmas pudding truffles


    Truffle Mix
  • 6 fl oz/175ml/0.75 cup fresh double cream
  • 10 oz/275g dark or plain chocolate, chopped
  • 1 oz/25g/2tbsp unsalted butter
  • 1 tbsp cocoa powder
  • 1 tbsp icing sugar
  • Marzipan topping:
  • 2 oz/50g yellow marzipan
  • Green and red food colouring
  • White chocolate topping:
  • 200g white chocolate melts (or white chocolate cut into fine bits)
  • Red and green glazed cherries or gummy lollies.


    Chocolate Truffle base
  1. Gently heat the cream in a large saucepan over a medium heat.
  2. Bring the cream to the boil slowly. Once it boils, quickly remove the cream from the heat.
  3. Chop the chocolate and add it to the pan. Stir well until it melts and turns smooth.
  4. Beat in the butter.
  5. Pour into a bowl. Cover, allow to cool and leave the truffle mixture in the fridge overnight to firm up.
  6. Carefully form the truffle mixture into about 20 balls using a teaspoon to assist. Place each formed truffle onto the paper, making sure they're not touching each other.
  7. Sieve the cocoa powder and icing sugar into a bowl. Mix well.
  8. Roll each of the truffles in the bowl until they're fully covered and return them to the tray or a clean plate.
  9. Marzipan Topping
  10. Roll out some of the marzipan into a thin sheet and cut small flower shapes using a cutter, place these onto the truffles.
  11. Colour some of the marzipan using the red food colouring and make tiny 'berries'.
  12. Colour some of the marzipan using the green food colouring and using a tiny holly leaf cutter or a small knife cut out leaves and using a knife carefully mark the veins.

  14. Position the holly and berries in place and put the truffles in mini paper cases.
  15. White Chocolate Topping
  16. Take the red cherries or gummy lollies and cut into small shapes that would pass for a red winter berry. Don't fuss too much just little shapes are adequate, and they don't have to be round.
  17. Take the green cherries and cut into small leaf shapes. These should be larger than the cherry shapes you've already cut.
  18. Melt the white chocolate inside a heatproof bowl over a small saucepan or in a double boiler over simmering water. Help it melt faster by stirring occasionally but take care not to let any condensation drip back into the bowl.
  19. Remove the melted chocolate from the heat. Allow it to cool for 10 minutes.
  20. Drizzle the white chocolate topping over each truffle to appear like custard.
  21. Arrange the berry cherry in the middle top of each truffle
  22. Align two leaves next to one another at an angle from the berry cherry. This will end up looking like holly with a berry on each truffle. Place in mini paper cases if desired.
